The Chef Knife has a 20 cm blade forged from high-carbon stainless steel, hardened to 58 HRC. The full tang runs the length of the handle and is secured with three brass rivets. The handle is pakkawood, a resin-stabilized laminate that resists moisture.
The blade ships with a 15-degree edge per side and a gentle curve suited to rocking cuts. Hand-wash and dry immediately; do not put it in the dishwasher. Hone regularly and sharpen on a whetstone as needed.

Spine is a touch sharp
The spine edges are not rounded, so they press into my finger during long cuts. A few minutes with sandpaper fixed it. The blade itself is excellent.
